1. The raw materials
The main raw materials used in the manufacturing of chocolate and its derivatives are cocoa, cocoa butter and sugar.
Favarger adds milk, cream, hazel nuts and almonds according to the recipe being used. It is also necessary to add lecithin from soya, which increases the pliability of the chocolate. Given the current debate on genetically modified food, Favarger uses exclusively lecithin from soya that is not genetically modified. |
